Undhiyo is a traditional gujarati dish mainly associated with Uttrayan. In Gujarat, Makarsankanti is celebrated by kite flying. Aa most of the day families are busy on the rooftops, an energy giving single dish meal 'Undhiyon' provides enough energy to take the strain. Usually Undhiyo is mixeg vegetable with small dal vadas or lentils or mixed flour balls in very spicy gravy and loads of oil.
The oil makes otherwise healthy dish a complete unhealthy option.
This year, I bought baked undhiyo and its a marvellous muxed vegetable with almost no oil. Its cooked in an earthenware on slow heat. An excellent prparation. I lovrd it.
