Rediscovering Forgotten Flavours – Lost Recipes of Uttarakhand


Uttarakhand is a land of lush green valleys, towering mountains, and rich cultural heritage. The cuisine of this Himalayan state is simple yet nutritious, designed to provide warmth and sustenance in the cold climate. Over time, as modernization and fast food have taken over, many traditional dishes have faded into obscurity. This blog post explores some of the forgotten recipes of Uttaranchal that once graced the kitchens of the Garhwali and Kumaoni people.


1. Chainsoo – The Forgotten Protein Powerhouse

History & Significance Chainsoo is a protein-rich dish made from black gram (urad dal) that was once a staple in the diet of the Pahari people. Known for its high nutritional value and warming properties, this dish was particularly favoured during harsh winters.

Ingredients:

  • 1 cup black gram (urad dal)
  • 2 tbsp mustard oil
  • 1/2 tsp asafoetida (hing)
  • 1 tsp cumin seeds
  • 1 tbsp garlic, minced
  • 1 tsp turmeric powder
  • 1 tsp red chilli powder
  • Salt to taste
  • 3 cups water
  • Fresh coriander for garnish

Method:

  1. Dry roast the black gram until aromatic, then grind it into a coarse powder.
  2. Heat mustard oil in a pan, add cumin seeds and asafoetida.
  3. Add minced garlic and sauté until golden brown.
  4. Stir in the turmeric, red chilli powder, and roasted dal powder.
  5. Pour in water and let it simmer on low heat for 20-25 minutes until thick.
  6. Garnish with fresh coriander and serve with steamed rice.

Jhangore Ki Kheer – The Forgotten Millet Dessert

History & Significance Jhangora (barnyard millet) was a staple grain in Uttaranchal before rice became common. Jhangore Ki Kheer is a traditional dessert that highlights the rich, nutty flavour of this lost ingredient.

Ingredients:

  • 1/2 cup barnyard millet (jhangora)
  • 4 cups milk
  • 1/2 cup sugar or jaggery
  • 1/4 cup mixed nuts (almonds, cashews, raisins)
  • 1/2 tsp cardamom powder
  • 1 tbsp ghee

Method:

  1. Rinse the millet thoroughly and soak for 15 minutes.
  2. Heat ghee in a pan and roast the millet until fragrant.
  3. Boil milk in a separate pot and add the roasted millet.
  4. Simmer on low heat, stirring occasionally, until the kheer thickens.
  5. Add sugar, cardamom powder, and nuts.
  6. Serve warm or chilled as a delicious dessert.

Reviving lost recipes like Chainsoo and Jhangore Ki Kheer is a way to reconnect with Uttaranchal’s culinary heritage. These dishes not only offer authentic flavours but also provide immense health benefits. By incorporating these traditional recipes into modern cooking, we can preserve and celebrate the unique food culture of Uttarakhand.
